Sausage stuffed shells

For many months now I’ve been promising G stuffed pasta shells. One night last week, I finally delivered on my promise. I made these on the fly with hot Italian sausage, garlic, onion, zucchini and a can of spaghetti sauce. The recipe called for a simple reduction of strained tomatoes and but I cheated and opted for the sauce…. which was a mistake as it was too heavy. Lesson learned.

1) the ingredients; 2) boil the pasta shells

3) saute onions and zucchini; and, 4) mix into the sausage with an egg and plenty of cilantro or parsley

5) stuff shells; 6) top with plenty of mozzarella and parmesan and bake

7 & 8) done, and good and so cheesey but sauce is too thick

9) a great fruit salad for dessert

Also a week and more ago, I spent the evening at the Sheraton Centre as I had meetings that went so very long over two crazy days. Room was nice with a great view of New City Hall and Osgoode Hall (the Law Courts).

  1. ah, at first when I just read stuffed shells with sausage, I thought you were literally stuffing snail shells, lol. Looks good though.

    Those look great.  So do you just cook the shells until partially done so they don’t get too soggy while baking?

    I think it’s great that your company lets you crash at a hotel. The food (as always), looks good. I’m going to try making that.
