1) the fettuccine
The KitchenAid mixer received another workout last night when we decided to make homemade fettuccine, with homemade pasta sauce. This dish was a real winner and believe me the mixer attachment makes it a billion times easier then using the hand-cranked variety machine, though I guess its a matter of semantics calling this ‘handmade’ when the machine did the bulk of the work. Still, it’s so much better taste-wise than any dried version.
Blee joined us and brought a wonderful Senses mango lime cheesecake for dessert, and we did a good job of preparing for this year’s “Oscar Dinner” which is in two weeks time.



2) mix all purpose flour and semolina together [this will make your life easier as semolina used on its own is very hard to work with]; 3) mix and add eggs and a bit of water to form a dough; 4) stop and hand kneed a couple times

5) after letting the dough rest a bit, start to run it through the machine


6) eventually you’ll get a long flat rectangle of dough; 7) change over to the fettuccine cutter attachment and in seconds you’ve got perfect fettuccine

8) add a homemade sauce of plum tomatoes, fresh basil, anchovy paste, a few chili flakes, garlic and onion and damn …. fettuccine perfection!
