Blueberry-Blue corn pancakes

1) blue cornmeal blueberry pancakes … a little out of the ordinary


In an effort to recover from the loss of one precious hour of sleep on Saturday night, G prepared a hearty Sunday morning breakfast of blueberry-blue corn(meal) pancakes. Now, I can usually only choke down pancakes once a year on shrove Tuesday but on tasting these, gosh, I may be willing to chow down five or six times a year. These were very yummy and less heavy than traditional pancakes. With thanks to our new most favouritest chef, Bobby Flay, and G of course.

2) batter of blue/yellow cornmeal, flour, blueberries, sugar and butter; 3) into the frypan; 4) flipped over

    Blueberries & syrup are the way to my heart.  The powdered sugar just made my heart stop.

    hahaha i made pancakes this past weekend too. i dug the recipe out of a book of recipes from old virginia… it came out pretty decently, although i really should have made them banana pancakes!
