Huckleberries

So, here’s the huckleberry coulis that never made it to Blee’s Thanksgiving dinner. It’s very simple really. Crush down the huckleberries, add in sugar (plenty of it), lemon juice, water and bring to a rolling boil for 10 minutes. Then whisk in the corn starch to thicken things and you’ve got a great coulis.

I find huckleberries very ‘earthy’ favour-wise. Perhaps not for everyone but worth a try.

3) the ingredients you’ll need; 4) the huckleberry paste post-chopping

5) bringing to a rolling boil and; 6) boil 10 minutes before adding in the corn starch

7) done: huckleberry coulis … just chill and serve
