Artichokes have always scared me …. I do like eating them but they scare me. Buying some, I think ‘good gawd, how do I cook these?’ ‘Where do you start?’.
Saturday I decided to face the fear (always the best course of action I think) and bought 5 artichokes (dirt cheap) down at the St. Lawrence North Market.
Sunday, Blee and I and G prepared them. And it’s quite easy.

1) artichokes at the ready; 2) carefully peel them and cut them so you can remove the hairy choke; 3) you’ll have a bowl full of yummy artichokes

4) pan fry some garlic and olive oil and toss in the artichokes for 5 minutes to brown them; then, 5) pour in a cup of white wine and let the simmer for 15 minutes and you’ll then have; 6) beautiful, soft, tasty artichokes to die for
You’re best two resources for prepping are: Jeff Smith’s wonderful “The Frugal Gourmet Cooks Three Ancient Cuisines” and Larousse’s “Gastronomique”
mmm those look amazing. what about roasting?
I love them too. Thanks for the preparation.
RYC: I guess change frightens people so they have to prove there is no need for it.
Thanks, Brent! ;) So do tell, how do they taste like?
